Despite his variants being central to the plot of Loki, Kang hasn't been mentioned at all, but the genius reasoning for this has just been revealed by Marvel. Loki Season 2 has so far proved to be a real boon for the MCU and its Multiverse Saga, garnering critical acclaim and the viewership to prove it, and yet it has interestingly danced around any mention of the arch-villain's true name. He Who Remains and Victor Timely have, of course, been pretty central to the story of Season 2, but the reason for Kang's omission from the script, specifically, has a much deeper meaning that was revealed in its most recent episode.
Loki Season 2, Episode 5, entitled "Science/Fiction," was an incredibly consequential penultimate episode that saw Loki finally get to grips with his Time Slipping. This means he now has the ability to visit anywhere on any timeline pretty much at will, which places him and the rest of the TVA in a much better position to rectify the situation that saw the Temporal Loom overload and explode. The final episode of the series, meanwhile, is supposedly about to set up Kang in earnest - yet the arch-villain hasn't even been mentioned thus far.

Loki's goal in Season 2 has ostensibly been to protect the TVA from falling apart and prevent the multiversal war between Kang variants, and yet the characters have somehow managed to avoid speaking his name entirely. Instead, the protagonists have mentioned and interacted with He Who Remains and Victor Timely, respectively, both of whom are Kang variants. While He Who Remains is the Kang variant that all the characters in Loki are directly concerned with, it seems odd that his true name has yet to emerge throughout the series.
Even Loki Season 1 danced around actually naming Kang, with the eccentric He Who Remains instead alluding to the character by calling himself a "conqueror." This is why none of the characters have spoken the name "Kang," as they are only acquainted with "He Who Remains," and his variants. There is another, more significant reason for the season omitting Kang's name from the script entirely, however, which is because Loki isn't his story.
Loki Isn't Kang's Story, It's Loki's
The overarching motif of Season 2, Episode 5 is that Loki now has the power to write his own story. The eponymous hero has undergone the MCU's biggest redemption arc in a journey of self-discovery that culminated in the realization that he cares deeply about his friends and that he doesn't necessarily need to succumb to the supposed unifying feature of all Loki variants: that they are destined to lose. He Who Remains, then, is the Kang placeholder that precludes Kang - the Multiverse Saga's primary antagonist - from stepping on Loki's toes as he reaches the epiphany that he is the writer of his own destiny.
Whether the Loki Season 2 finale will finally break the trend and bring Kang to the fore as it helps build toward the Multiverse Saga's climactic team-up movie in Avengers: The Kang Dynasty remains to be seen. What it has managed to establish in the meantime, however, is that Loki, now embodying the role of the "God of Stories," has made an impact on the Multiverse Saga without bringing Kang's name into it at all. This fact, among many, is what has helped make Loki such a rewarding and impactful addition to the MCU, and Loki's character one of its most beloved.
